Brassica varieties differ significantly in their characteristics, meaning each variety - such as cabbage or broccoli - requires a specific processing solution. To address these differences, Sormac supports processors with in-depth product expertise and hands-on testing, enabling you to combine the right cutting, washing, and drying technology for a predictable and optimal production process.

The right processing for each brassica variety

Our machines can be seamlessly integrated in a line solution, and cover all main processing steps, starting from the initial supply and preparation to cutting, washing, drying, weighing, mixing, and conveying. Depending on the crop type, the required capacity, and the intended end product, we always deliver a solution that fits. Where necessary, this may also include third-party equipment to complete the processing line.

These solutions are suitable for the fresh processing of, among others:

  • Head cabbages, such as white cabbage, red cabbage, Savoy cabbage, and pointed cabbage;
  • Loose-leaf cabbages, such as kale and cavolo nero;
  • Asian cabbages, such as pak choi and Chinese cabbage;
  • Flowering brassicas, such as cauliflower, broccoli, and romanesco.

Slicing

Precise cabbage slicing, even with dense structures

A consistent and precise slicing is essential for high product quality with uniform, attractive appearance. Moreover a clean cut is protective of the product cell structure and is beneficial to optimal shelf life. Based on these principles, our slicers are carefully designed with features that work together to secure the best possible cutting quality – including optimal cutting speeds, knife design, and product guidance during slicing.

Sormac Belt slicer BSM-150 is the proven best choice on the market for vegetable cutting equipment. It is suitable for various applications including both loose-leaf cabbages as well as dense cabbage varieties. Featuring a wide 150 mm belt, high rotation speed and high belt speed, the BSM can achieve high throughput at an amazingly small footprint. With its many knife options, digitally adjustable cut sizes and up to 100 programmable recipes the BSM will suit your specifications.

Discover some of the options specifically for cabbage varieties:

  • 10-blade disc with cutting thicknesses of 1–4 mm – suitable for dense cabbage varieties such as white and red cabbage and higher capacity needs, and.
  • Twin wing knife - for dense cabbage varieties and a requirement of slice thickness above 4 mm

Test before you invest!

We understand how important it is to experience a machine in practice before making a decision. You can visit one of our demo locations, join an online demonstration, or we can bring the machine to your site. If desired, we can test it with your own product so you can see for yourself how the machine performs.

Washing

Optimal washing with controlled product handling

Washing is crucial for effectively removing dirt, sand and bacterial residues while avoiding unnecessary stress on the product. Sormac washing solutions create controlled water flow and product movement, ensuring that cut cabbage is carefully cleaned. This supports food safety and contributes to stable quality in downstream drying and packaging.

  • Spiral washer SW-50 compact spiral washer for professional washing.
  • Spiral washer SW-80 spiral washer for higher-capacity applications.

Drying

Optimal drying of cabbage varieties

Effective drying supports product quality, appearance, food safety and extend shelf life. Sormac offers a complete range of drying equipment for fresh-cut cabbage varieties, such as horizontal and vertical mechanical centrifuges.

Our vertical systems are suitable for both leafy vegetables and firm fresh cut varieties and are available in manual (MC) and automatic (FC) versions. Our horizontal centrifuges SC/NextGen are designed for all types of leafy vegetables and provide an extremely careful, product-friendly treatment.

For broccoli and cauliflower florets, the Drying Belt DB can be used as a dewatering system, removing excess water from the product via air-blow stations. All machines can be integrated into a complete line solution. The capacities listed below depend on product type, moisture content at entry, and desired moisture content at exit.

  • Basket Centrifuge MC universally applicable, with a maximum capacity of 1,000 kg/hour.
  • Vegetable Centrifuge FC suitable for drying cut vegetables and cabbage varieties, with a capacity of up to 2,000 kg/hour.
  • Centrifuge SC/NextGen dries leafy greens and cabbage varieties quickly yet gently, with a capacity of up to 2,500 kg/hour.
  • Drying Belt DB drying for broccoli and cauliflower florets. Capacity depends on belt design, motor selection, and product weight.

Mixing

Recipe-driven mixing with controlled dosing

For cabbage salads and stir-fry mixes, mixing is all about process control. Even distribution, reliable dosing, and stable product flow are essential. Recipe-driven supply and dosing allows processors to control the compositions and volumes and easy switching between formulations, whether simple two-ingredient mixes or complex recipes with multiple components.

Our Automatic recipe conveyor RBA and Recipe conveyor RB supply mixes - or single components - onto the line in a controlled manner. Additionally, our washers are well-suited for gently mixing components. If this step is not part of the process, specialized mixing drums provide an effective alternative, ensuring even distribution of all components and, consequently, consistent product quality.

  • Automatic Recipe Belt RBA recipe-driven supply and dosing.
  • Recipe Belt RB controlled product supply for mixing processes.
  • Mixing Drum MT ensures even mixing for consistent final quality.
  • Weighing Belt WB precise dosing as the foundation for recipes.

Hygienic machine design as a foundation for food safety

Hygienic machine design plays a crucial role in ensuring food safety during the processing of leafy greens. The design is based on the principle of easy and thorough cleanability, enabling effective disinfection. This minimizes microbiological risks and results in a hygienically safe machine.

At Sormac, this principle is central to all the machines we design. Examples include:

  • Easy to clean, smooth surfaces that reduce the risk of bacterial buildup.
  • Water-draining frame with sloped surfaces to prevent water retention.
  • Open frame structure.
  • Easy access for cleaning through large, wide-opening doors.
  • Hygienic zones where mechanical components are located below the product flow.
  • Foldable fans on dewatering and transport conveyors.
